Here's a sample I've attached. So, if I ask it to show grand totals, it sums up the columns for both the dates. But, I would want to do a difference instead of sum. Please, let me know if there's any way I could achieve this.

Yes, you are right. Grand Total uses sum aggregation by default.
Currently, there is no option for changing the aggregation formula of Grand Total.

Please note that this is the closest to the desired output solution available at the moment.
You can display only difference if desired, by excluding the sum row.
