Hide rows in grid, but still have values be included in grand total

Like collapsing all but one row on the grid,
but instead of collapsing want to hide the rows, but still have everything shown on grand total.
 
USECASE: 
To show a detailed breakdown of one category,
and also show the context of the totals across all categories
(but hiding the rows of the other categories)
 
Are we able to do it in FM?

Thank you for reaching out to us.
 
If we understand correctly, you would like to show a single member, but calculate grand total as if all the members were displayed.
If so, please note that grand totals only serve to display data that is currently available on the grid. If some members are filtered out, Flexmonster will not consider them during the calculation of the grand total. This behavior cannot be changed since it is essential for the grid's structure.
 
In case we did not understand your requirement correctly, please provide us with additional details or illustrate the desired behavior.

Is there some programmatic way e.g. to display:none the rows? will the grand total still find them?

There is no way to hide the field's members except for filtering.
